Happy Thanksgiving to all! Late, I know, but most of us extend the holiday through the weekend, yes? I learned something this year. BRINE THAT BIRD! I have done turkeys on the grill, deep fried, and of course in the oven. This year was the first time I brined the turkey before roasting it. I somewhat followed the advice of Food Network's Alton Brown. It turned out beautifully. And it only took 2.5 hours to cook. We also found some goliath sized turkey drums and low smoked them on the grill for about 5 hours. They were delicious, but a tad bit dry. I did not brine them with the turkey, but next year, I will, and do the same.
