Check out this abstract for a study where they put 21 experienced violinists through DBT's with various violins, both old and new. The violinists preferred the tone of the newer instruments in general over the older ones, and preferred the Stradivarius the least! Guess professional musicians are just as prone to psychosomatic bias as us crazy audiophiles.
