I have always wanted to live in one and am now wondering how the acoustics
would be in one I would think improved but you never know.

I built a couple going back about 20 years ago for customers. Generally speaking the exterior walls are very dead, about as dead as a cbs wall due to their sheer mass. The logs aren't reverberant like a wood overlay floor or wood applied to walls and ceiling would be. Both my customers had the interior of all walls finished in paster so they were about as reflective as a typical drywall application.

I'll take plaster over drywall any day of the week!
