CAT-5 is kind of a kludge as you need a HUGE amount of strands to even equal 12-gauge common wire(like 50!). Teflon coated is fine as it does the job and can be pulled in conduit. If you really want uber-coating, just get some heat-shrink tubing and put that over the wires.
I do this - take two 12 gauge wires and twist them together - about one turn per foot or so, then heat-shrink them together. Makes a very good quality audiophile looking cable for about 50 cents a foot.
